Procedure

  1. Put the potatoes in a pot, and cover them with cold water.
  2. Put the pot on the stove, and bring to a boil.
  3. Cook the potatoes until they begin to crack.
  4. Drain the potatoes, and place them in a pan by a fire or in the oven until they are quite dry and fall to pieces.
  5. Rub the potatoes through a wire sieve onto a serving dish.
  6. Serve immediately.
