Procedure

  1. Preheat oven to 350°F (175°C).
  2. Whisk together the flours, sugars, baking soda, baking powder, and salt.
  3. Whisk together the mashed banana, egg, buttermilk, melted butter, and olive oil.
  4. Add dry ingredients to the wet, and mix just until combined. Over-mixing will make them tough.
  5. Add the chocolate chips, if including, and mix.
  6. If needed, prepare the muffin tins by greasing them or lining them with liners (see notes).
  7. Divide the batter between the prepared muffin cups, filling each cup about ⅔ full.
  8. Bake for about 20 minutes or until cooked through—a tester inserted into the center should come out clean.

Notes, tips, and variations

  • I use three different flours here. King Arthur is plain white flour good for establishing a familiar taste for folks not used to whole grains. Einkorn is a nutrient-rich wonderful grain with less gluten development than wheat and so perfect for cookies and muffins. It has a fairly distinctive taste so it's good to start with a little, but if you like it you can make these with 100% Einkorn. The Farmer Ground all purpose flour is a great jack-of-all-trades. Its taste is almost the same as white flour but it contains a lot more complex nutritional profile being a whole-grain milled flour. This is available in the US's Northeast region but local millers have started to mill great whole-grain mixes and it should be easier to find a substitute than it might've been 10 years ago.
  • If desired, the muffins can be left in the oven to brown slightly after they are cooked through in the center. If you overbake them, they'll be okay but not as fluffy.
  • Leave the muffins on the counter overnight to develop a little more cookie-like chewiness.
  • The batter is fairly high in oil and butter, so you can skip the liners if your pans are fairly nonstick.
